quarter cup Coriander seeds

2 tbsp Sesame seeds

2 tbsp Cumin seeds

2 tbsp Oil

15 pieces Curry leaves

20 pieces Green chillies

Directions

Heat a pan over medium flame and dry roast peanuts, dry coconut, coriander seeds, sesame seeds, and cumin seeds until fragrant.

Transfer the roasted ingredients to a plate and let them cool.

In the same pan, add oil and roast curry leaves and green chillies until crisp. Let them cool.

Grind both sets of ingredients separately into fine powders.

Mix everything together to create the Sabji Premix Masala.

How to Make Sabji Using this Masala:Heat oil in a pan, add chopped vegetables of your choice, and sauté until partially cooked.Add 2 tablespoons of sabji premix masala, salt to taste, and water. Cover and cook until the vegetables are tender.
