quarter cup Poha - flattened rice
half cup Curd
1 teaspoon Oil
half teaspoon Mustard seeds
half teaspoon Cumin seeds
1 Sprig Curry leaves
Salt as per taste
Tips
Adjust the amount of curd according to your preference for tanginess.
For a crunchier texture, you can add finely chopped vegetables like cucumber, tomatoes, or bell peppers.
Ensure the poha is completely soaked in curd to achieve the desired consistency.
Directions
In a bowl, combine 0.25 cup washed poha and 0.5 cup curd.
Mix well until the poha is evenly coated with the curd.
Cover the bowl and refrigerate it overnight or for at least 4 hours to allow the flavors to meld.
Heat 1 teaspoon of oil in a small pan over medium heat.
Add 1/2 teaspoon each of mustard seeds and cumin seeds.
Once the seeds start spluttering, add a sprig of curry leaves.
Allow the spices to crackle for a few seconds, then remove the pan from heat.
Take out the chilled poha from the refrigerator.
Pour the prepared tempering (tadka) over the poha and curd mixture.
Mix gently until the tempering is evenly distributed throughout the poha
Spoon the chilled Overnight Poha into serving bowls.
Garnish with fresh coriander leaves or grated coconut if desired.
Serve immediately and enjoy the cool, tangy flavors!
