half teaspoon Mustard seeds

200 grams French Beans
200 grams Beetroot, peeled and chopped
1 teaspoon Salt
1 teaspoon Cumin powder
1 teaspoon Coriander powder
1 teaspoon Red chilli powder
half cup Water
Tips
For added flavor, you can include a pinch of garam masala at the end of cooking.
Adjust the level of water based on your preferred consistency—more water for a curry-like dish, less for a drier version.
Directions
Place a pan over medium heat and add 0.5 tsp cumin seeds, 0.5 tsp mustard seeds, and 8-10 curry leaves. Sauté until the seeds begin to crackle.
Add 200 g chopped French beans and 200 g chopped beetroot to the pan. Season with 1 tsp salt. Mix well and sauté for about 5 minutes.
Sprinkle in 1 tsp cumin powder, 1 tsp coriander powder, and 1 tsp red chilli powder. Mix thoroughly to coat the vegetables with the spices.
Add 0.5 cup water to the pan. Cover and cook for 10 minutes or until the vegetables are tender.
Once cooked, serve hot with roti or rice.
Notes
People with kidney stones or certain gastrointestinal conditions should moderate their intake of beetroot due to its high oxalate content.
