1 tablespoon Cumin seeds

1 tablespoon Fennel seeds

25 pieces Black Peppercorns

2 pieces Javetri

1 teaspoon Nutmeg powder

8 pieces Cloves

8 pieces Green cardamom

3 pieces Black cardamom

3 pieces Star anise

3 pieces Bay Leaves

2 inches Cinnamon

4 pieces Red chillies

2 tbsp Anardana

Tips

Adjust the quantity of red chillies according to your spice preference.

Ensure the spices are cooled completely before grinding to prevent them from becoming lumpy.

Directions

Dry roast coriander seeds, cumin seeds, fennel seeds, black peppercorns, javetri, nutmeg powder, cloves, green cardamom, black cardamom, star anise, bay leaves, cinnamon, and red chillies on medium to low flame until fragrant.

Add anardana and roast again for 2 minutes.

Let the roasted spices cool down.

Grind the cooled spices into a fine powder.

Store the biryani masala powder in an airtight container for up to 6 months.
