250 grams Besan
1 & half cups Water
Food color as per needed
Oil as per needed
250 grams Sugar
1 cup Water
1 tablespoon Cardamom powder
1 tablespoon Ghee
3 tbsp Magajbi
Tips
Ensure the oil is hot enough before frying to achieve crispy boondi.

Store ladoos in an airtight container to keep them fresh for a week.
Directions
In a bowl, combine the besan and water. Mix well until there are no lumps.
Add the organic food color, if using, and mix thoroughly to incorporate.
Heat oil in a kadhai (deep frying pan). Using a boondi maker spoon, carefully drop the besan mixture into the hot oil to form small droplets (boondi).
Fry the boondi on high flame until they turn golden and crispy. Remove and drain on a paper towel. Repeat until all the mixture is fried.
In another kadhai, heat sugar and water to make a sugar syrup. Stir until the sugar dissolves and the mixture reaches a one-string consistency.
Add cardamom powder to the syrup and mix well.
Add the fried boondi to the sugar syrup and mix until well coated.
Add ghee and roasted melon seeds to the mixture. Turn off the flame, cover, and let it sit for a few minutes.
Once cooled, shape the mixture into small ladoos, approximately 27 g each. You should get about 25 ladoos.
Notes
While boondi ladoo is a tasty treat, those with diabetes or weight management goals should consume it in moderation due to its high sugar content.
