Prepare Kashmiri Red Chilli Paste by grinding soaked chillies. Cook the paste in hot oil until crumbly. Let it cool.

Chicken Lollipop

Ingredients

12 Nos. Chicken lollipop

1 Tbs Salt

quarter teaspoon White pepper powder

5 Serving Garlic Cloves

half inch Ginger

1 piece Green chilli

1 tablespoon Red chilli paste

1 teaspoon Light soy sauce

1 teaspoon Vinegar

4 tbsp Corn flour

3 tbsp Refined flour

1 piece Egg White

half pinch Baking Soda

Directions

Divide the wings into drumettes and wingettes.

Trim and scrape off the meat to shape into lollipops.

Alternatively, use ready-made lollipops.

Marinate chicken with salt, white pepper powder, ginger-garlic-chilli paste, red chilli paste, soy sauce, vinegar, corn flour, refined flour, egg, and baking soda.

Let it sit for 30 minutes.

Fry marinated chicken until 80-90% cooked. Rest for 15 minutes. Fry again until crispy.

2 tbsp Ketchup

2 tbsp Red chilli sauce

1 teaspoon Dark soy sauce

1 teaspoon Vinegar

half pinch White pepper powder

Salt as per taste

Hot water as per choice

1 tablespoon Corn flour

Water as per choice

quarter cup Spring onion greens

Directions

Heat oil in a wok.

Add ginger, garlic, spring onion bulbs, and green chilli. Saute.

Add red chilli paste, ketchup, red chilli sauce, soy sauce, vinegar, white pepper powder, and salt.

Cook for 1-2 minutes.

Add hot water and corn flour slurry to thicken the sauce.

Switch off heat. Flash fry chicken lollipops and coat with the sauce.

Garnish with spring onion greens.
