Kolhapuri Chicken Sukka is a flavorful dry chicken dish hailing from the Kolhapur region of Maharashtra, India. This spicy, aromatic recipe is made with tender, succulent chicken cooked with an array of traditional spices, including the signature kanda lasun masala, which gives the dish its unique taste. This vibrant chicken dish pairs perfectly with rice, rotis, or naan, making it a wonderful choice for a cozy meal.

Chicken Broth
Ingredients

half kg Chicken
3 tbsp Oil
1 piece Onions, Chopped
half teaspoon Turmeric powder
1 teaspoon Salt
3 cups Hot water
Directions
Heat a pan with 2 tbsp oil.
Add 1 chopped onion and sauté until golden brown.
Add 0.5 tsp turmeric and the 500g chicken.
Sauté for a couple of minutes and then cover and cook for 3 minutes.
Add salt and 3 cups of hot water.
Cover and cook for 10-12 minutes until the chicken is cooked through.
Once cooked, remove the chicken from the broth. The broth can be served as a soup called "Alani soup" in Marathi.
White Paste
Ingredients

2 tbsp Coriander seeds
2 tbsp Sesame seeds
1 teaspoon Cumin seeds
4 pieces Black Peppercorns
4 pieces Cloves
1 inch Cinnamon stick
1 teaspoon Poppy seeds
2 pieces Cardamom
1 piece Star anise
half cup Dry coconut
Water as per taste
Directions
In a pan, dry roast the coriander seeds, sesame seeds, cumin seeds, black pepper, cloves, cinnamon, poppy seeds, green cardamom, and star anise over low flame until aromatic.
Transfer to a mixer and set aside.
Roast the grated dry coconut until golden brown and add to the mixer.
Add a little water and grind everything to a smooth white paste.
Green Paste
Ingredients

2 tbsp Oil
1 piece Onion
1 inch Ginger
6 pieces Garlic Cloves
half cup Coriander leaves
Directions
In a pan, heat 2 tbsp oil and add 1 chopped onion.
Sauté until the onion turns transparent.
Transfer the onion to a mixer and add ginger, garlic, and fresh coriander.
Add water and grind everything to form a smooth green paste.
Kolhapuri Chicken Sukka
Ingredients

2 tbsp Kanda lasun masala or red chili powder
1 teaspoon Chicken masala
2 tbsp White paste
3 tbsp Green paste
Coriander as per taste
half kg Boiled chicken
Salt as per taste
Water as per taste
Tips
Adjust the level of spiciness according to your preference.
For a more authentic taste, you can use homemade kanda lasun masala.
Serve with steamed rice or Indian breads like roti or naan for a complete meal.
Directions
In a pan, heat 3 tbsp oil.
Add the remaining chopped onion and sauté until golden brown.
Add 2 tbsp kanda lasun masala or red chili powder and sauté until the oil starts to separate.
Add 3 tbsp green paste and 2 tbsp white paste, and sauté until the oil separates.
Add the boiled chicken only, mixing well.
Add 1 tsp chicken masala and a little water if needed, and cook for about 5 minutes.
Garnish with fresh coriander and serve hot.
Notes
The dish may be high in sodium and saturated fats, so it should be consumed in moderation, especially by those with high blood pressure or cholesterol concerns.
