Foxtail Millet Dhokla

Ingredients
2
1 cup Foxtail millet flour
2 tbsp Chickpea flour
300 ml Water
1 teaspoon Ginger paste
1 teaspoon Green chili paste
1 teaspoon Eno fruit salt
1 teaspoon Lemon juice
1 teaspoon Sugar
half teaspoon Salt
2 tbsp Oil
1 teaspoon Mustard seeds
1 teaspoon Sesame Seeds
2 pieces Green chillies
8 pieces Curry leaves
Coriander as per choice
Tips
Adjust the amount of green chili based on your spice preference.
Ensure the steaming pot has enough water to avoid drying out.
You can add grated vegetables like carrots or spinach for added nutrition.
Serve hot for the best texture and flavor.
Directions
In a mixing bowl, combine foxtail millet flour, chickpea flour, ginger paste, green chili paste, sugar, and salt.Gradually add water and whisk until you achieve a smooth batter.
Just before steaming, add lemon juice and Eno fruit salt to the batter. Mix gently until it foams.
Grease a steaming dish or plate with a little oil. Pour the batter into the dish.
Place the dish in a steamer and cover it. Steam for about 15-20 minutes, or until a toothpick inserted in the center comes out clean.
In a small pan, heat oil. Add mustard seeds and let them splutter. Add sesame seeds, green chilies, and curry leaves. Sauté for a minute.
Once the dhokla is cooked, remove it from the steamer. Pour the tempering over the dhokla and let it cool slightly.
Cut the dhokla into squares, garnish with fresh coriander leaves, and serve with green chutney or yogurt.
