20 grams Cumin Seeds

10 grams Fennel seeds

1 pinch Salt

10 grams Black Peppercorns

1 inch Stick Cinnamon

10 grams Green cardamom pods

3 pieces Bay leaves

1 piece Javitri

1 piece Star anise

10 grams Whole Cloves

1 piece Black cardamom

10 grams Stone flower

2 pieces Red chillies

5 grams Nutmeg

1 tablespoon Kasuri methi

1 tablespoon Dried rose petals

Tips

Adjust the quantity of red chillies according to your spice preference.

For a more intense flavor, lightly crush the whole spices before roasting.

Use fresh, high-quality spices for the best results.

Directions

In a pan over low heat, dry roast coriander seeds, cumin seeds, fennel seeds, black peppercorns, cinnamon stick, green cardamom pods, bay leaves, javitri, star anise, cloves, masala cardamom, stone flower, red chillies, and nutmeg until fragrant. Let them cool completely.

Transfer the roasted spices to a mixer grinder. Add kasuri methi and dried rose petals. Grind into a fine powder.

Store the Garam Masala in an airtight container. It can last for up to 4-6 months.
