60 grams Corn flour

1 pinch Black Pepper Powder

2 tsp Kashmiri red chili powder

2 tbsp Oil

1 piece Onion

1 tablespoon Ginger

2 tbsp Garlic

2 pieces Green Chilies

half piece Capsicum

2 tbsp Spring onion bulbs

half cup Coriander stems

2 tsp Soy sauce

1 teaspoon Chili paste of 1-3 chilies

1 tablespoon Ketchup

1 tablespoon Red chili sauce

1 pinch White Pepper Powder

Salt as per taste

2 tbsp Corn flour

4 tbsp Water

Directions

Cut the cauliflower into bite-sized florets and rinse them well with water and a large pinch of salt. Let them rest in salt water for 3-4 minutes, then rinse again with fresh water and drain.

In a bowl, mix refined flour, corn flour, salt, black pepper powder, and Kashmiri red chili powder. Gradually add water to make a semi-thin batter.

Coat the cauliflower florets with the batter and fry them in hot oil until golden brown and crispy. Drain excess oil on a paper towel and set aside.

In a separate wok, heat oil and sauté onion, ginger, garlic, and green chilies until fragrant. Add capsicum, spring onion bulbs, coriander stems, soy sauce, green chili paste, ketchup, red chili sauce, white pepper powder, and salt. Stir well.

Add water to make the sauce, then bring it to a boil. In a bowl, mix corn flour and water to make a slurry, then gradually add it to the sauce to thicken.

Add the fried cauliflower to the sauce along with fresh coriander, spring onion greens, and garam masala. Coat the cauliflower with the sauce, then sprinkle more spring onion greens on top.
