250 grams Coriander seeds
50 grams Cumin Seeds
50 grams Dry coconut
50 grams Poppy Seeds
50 grams Sesame Seeds
50 grams Black Sesame Seeds
4 tbsp Oil
10 grams Black Peppercorn
10 grams Cinnamon
10 grams Bay leaf
10 grams Javetri
10 grams Star anise
10 grams Whole Cloves
10 grams Black cardamom
10 grams Stone flower
10 grams Tirphala
10 grams Nagkesar
10 grams Fennel seeds
10 grams Ferula asafoetida
Tips
Store the Goda Masala in an airtight container in a cool, dry place to maintain its freshness.
Adjust the quantity of masala according to your taste preferences and the dish you're preparing.
Use Goda Masala in moderation as it has a potent flavor profile.
Directions
Dry roast coriander seeds, cumin seeds, and dry coconut separately until fragrant. Allow them to cool.
In a mixer grinder, combine the roasted ingredients along with poppy seeds, sesame seeds, and black sesame seeds. Grind into a fine powder.
In a pan, heat oil and roast black peppercorn, cinnamon, bay leaf, javetri, star anise, cloves, black cardamom, stone flower, tirphala, nagkesar, fennel seeds, and Ferula Asafoetida until fragrant. Let it cool.
Combine the two spice mixes from steps 2 and 3 and grind again to ensure all flavors are well blended.
Store the Goda Masala in an airtight container for up to 6 months.
Servings: Makes approximately 500g of Goda Masala.
