1 tablespoon Oil

1 piece Bay leaf

1 piece Black cardamom

7 pieces Garlic Cloves

2 inches Ginger

2 pieces Green chillies

2 pieces Onion

half piece Beetroot

half kg Tomatoes

quarter cup Coriander roots & stems

Salt as per taste

1 teaspoon Kashmiri red chilli powder

1 teaspoon Coriander powder

half teaspoon Cumin powder

quarter teaspoon Black pepper powder

Hot water as per choice

3 tbsp Ketchup

half piece Lemon

half teaspoon Chaat masala

2 tbsp Sugar

2 tbsp Butter

Directions

Heat oil in a pan over high heat.

Add bay leaf, black cardamom seeds, garlic, ginger, green chillies, onions, and beetroot.

Cook until onions turn translucent.

Add tomatoes, coriander roots & stems, salt, and Kashmiri red chilli powder. Cook for 2-3 minutes.

Add the rest of the powdered spices, hot water, cover, and cook over medium flame for 20-25 minutes.

Let it cool. Discard bay leaf and blend the mixture into a fine puree. Strain the puree into a stockpot.

Add hot water, ketchup, lemon juice, chaat masala, sugar, and butter. Bring to a boil.

Adjust seasoning as per taste.

Serve garnished with butter and black pepper powder, accompanied by breadsticks.
