250 grams Garcinia indica (ratamba fruit)

Tips
Adjust the sweetness according to your preference by adding more or less sugar.
Store the Kokam Sarbat concentrate in a clean, airtight jar in the refrigerator for up to a 6 month.
Directions
Wash the Garcinia indica fruit thoroughly and cut them into half-cup-shaped pieces, removing the seeds.
Sterilize a glass jar by washing it with hot water and let it dry completely.
Fill each half-cup-shaped Garcinia indica fruit piece with sugar and place them in the sterilized glass jar.
Cover the jar and place it under direct sunlight for 2-3 days, allowing the fruit to release its juices.
After 2-3 days, strain the juice from the jar, discarding any solids.
To prepare the Kokam Sarbat, mix 20 ml of the Kokam juice concentrate with 120 ml of water in a glass.
Stir well and the Kokam Sarbat is ready to be served chilled.
Notes
Avoid consuming Kokam Sarbat if you have a history of allergies to citrus fruits or gastrointestinal issues.
