Fill each half-cup-shaped Garcinia indica fruit piece with sugar and place them in the sterilized glass jar.

Cover the jar and place it under direct sunlight for 2-3 days, allowing the fruit to release its juices.

After 2-3 days, strain the juice from the jar, discarding any solids.

To prepare the Kokam Sarbat, mix 20 ml of the Kokam juice concentrate with 120 ml of water in a glass.

Stir well and the Kokam Sarbat is ready to be served chilled.
