Directions
Preheat the Oven: Preheat your oven to 180°C (350°F) and line a baking tray with parchment paper.
Mix the Dry Ingredients: In a large mixing bowl, combine 0.5 cup (55g) wheat flour, 1 cup (85g) oats, 1 tsp (5g) baking powder, 0.25 tsp (1.25g) salt, and 1 tsp (2g) cardamom powder. Mix well.
Cream the Ghee and Sugar: In a separate bowl, cream together 0.5 cup (80g) ghee and 0.5 cup (75g) coconut sugar until light and fluffy.
Combine the Mixtures: Gradually add the dry ingredients to the creamed ghee and sugar mixture. Mix until a dough forms.
Shape the Biscuits: Take about 25g of dough for each biscuit, roll it into a ball, and flatten it slightly with your palms. Place the shaped biscuits on the prepared baking tray.
Bake: Bake in the preheated oven for 18-20 minutes or until the edges turn golden brown.
Cool and Serve: Allow the biscuits to cool on the baking tray for a few minutes before transferring them to a wire rack to cool completely. Enjoy your homemade oats digestive biscuits!
