Horsegram and Foxtail Millet Idli is a delightful twist on traditional idlis, packed with nutritional benefits. This recipe combines the goodness of horsegram and foxtail millet, offering a wholesome and delicious breakfast or snack option.
Ingredients

1 cup Foxtail millet
quarter cup Horsegram
quarter cup Urad dal
quarter cup Flattened rice
half cup Yogurt
Salt as per taste
Water as per needed
Tips
Soak the millet, horsegram, and dal separately for at least 4 hours for best results.
Fermentation time may vary based on climate; ensure a warm place for the batter to ferment.
Adjust consistency with water while grinding to achieve a smooth batter.
Directions
Wash and soak foxtail millet, horsegram, urad dal, and flattened rice in separate bowls for 4 hours.
Drain water from each ingredient before grinding.
Grind soaked foxtail millet, horsegram, urad dal, and flattened rice together into a smooth batter using a wet grinder or blender.
Add yogurt and salt to the batter and mix well. Let it ferment overnight or for at least 8 hours.
Grease idli molds with oil or ghee.
Pour batter into each mold and steam in a steamer for 10-12 minutes or until a toothpick inserted comes out clean.
Allow idlis to cool slightly before removing them from the molds.
Serve hot with coconut chutney or sambar.
