25 grams Split yellow moong dal
5 grams Ghee or oil
1 gram Cumin Seeds
1 gram Mustard seeds
1 gram Turmeric Powder
1 gram Cumin Powder
1 gram Coriander powder
half gram Red chili powder
Salt as per taste
half liter Water
Coriander leaves as per taste
Tips
Soak the millet for a few hours before cooking to reduce the cooking time.
Directions
Rinse the jowar millet and moong dal thoroughly under running water. Set aside.
In a pressure cooker, heat the ghee or oil over medium heat. Add cumin and mustard seeds. Let them splutter.
Stir in turmeric powder, cumin powder, coriander powder, and red chili powder. Sauté for a few seconds until fragrant.
Add the rinsed jowar millet and moong dal to the cooker. Stir well, ensuring the spices coat the grains.
Pour in 500 ml water and season with salt. Close the pressure cooker lid and cook for 4-5 whistles or until both millet and dal are soft.
Once cooked, allow the pressure to release naturally. Open the lid, stir, and garnish with fresh coriander leaves.
Serve the khichdi hot with the veggie omelet for a complete meal.
Veggie Egg Omelet

10 grams Onion
10 grams Tomato
5 grams Bell Peppers
5 grams Spinach
1 gram Cumin Powder
1 gram Black Pepper
Salt as per taste
5 grams Oil
Directions
Beat the Eggs: In a bowl, crack two eggs and whisk until well beaten.
Prepare Vegetables: Finely chop the onion, tomato, bell peppers, and spinach.
Cook the Veggies: Heat oil or butter in a non-stick pan over medium heat. Sauté the chopped vegetables for 2-3 minutes until soft.
Season and Cook: Add cumin powder, black pepper, and salt to taste. Stir well.
Add Eggs: Pour the beaten eggs over the veggies and spread them evenly in the pan.
Cook the Omelet: Let the omelet cook for 2-3 minutes on one side. Flip carefully and cook the other side for another 1-2 minutes until fully set.
