Ingredients
2
half cup Rice
half cup Moong dal
1 tablespoon Ghee
half teaspoon Cumin seeds
quarter teaspoon Asafoetida
4 cups Water
Salt as per taste
quarter teaspoon Turmeric powder
Tips
Adjust water according to your preferred consistency—thicker or thinner.
Include vegetables like carrots and peas for more nutrients.
Add other spices like ginger or curry leaves for more flavor.
Directions
Prepare the Rice and Dal: Combine the rice and moong dal in a bowl. Wash them thoroughly until the water runs clear. Add fresh water and let the mixture soak for 20–25 minutes.
Heat the Ghee: In a pressure cooker, heat ghee over high heat. Add the cumin seeds and asafoetida. Let the cumin seeds crackle.
Add the Rice and Dal: Drain the soaked rice and dal, then add them to the pressure cooker. Stir and cook for 1–2 minutes.
Add Water and Seasonings: Pour in the water, add salt to taste, and stir in turmeric powder. Bring the mixture to a boil.
Pressure Cook the Khichdi: Secure the lid on the pressure cooker and cook the khichdi for 4 whistles over medium-high heat. Turn off the flame and let the pressure release naturally.
Adjust Consistency: Once the cooker is de-pressurized, open the lid and stir the khichdi. Add more hot water if you want a thinner consistency.
Serve and Enjoy: Your khichdi is ready to serve! Enjoy it hot with kadhi, papad, pickle, and a drizzle of ghee.
