Ingredients

2 & half cups Rice
1 cup Udid dal
2 tbsp Chana dal
quarter teaspoon Fenugreek seeds
1 cup Grated fresh coconut
Salt as per taste
Tips
Maintain a thick consistency while spreading the batter for Amboli.
Adjust salt according to taste preference.
For crispier Ambolis, cook on low flame for a longer time.
Store leftover batter in the refrigerator for up to 2 days.
Directions
Wash rice, Udid dal, Chana dal, and fenugreek seeds. Soak rice and fenugreek seeds together, and Udid dal and Chana dal together for 6-8 hours.
Strain soaked ingredients and grind with wet coconut to a fine paste.
Ferment the mixture in a deep vessel for 8-10 hours. Add salt and stir gently.
Heat a non-stick pan, spread oil, and pour two layers of amboli batter. Cook on low-medium heat until golden brown.
Serve hot with coconut chutney and savory gravies.
