three quarters kg Bottle gourd

4 tbsp Ghee

half cup Sugar

1 pinch Green cardamom powder

1 teaspoon Chironji

6 pieces Cashew

6 pieces Almond

Directions

Cook the Bottle Gourd: Heat 3 tbsp ghee in a kadhai over high heat. Add the grated gourd and cook over medium flame until translucent (about 4-5 minutes).

Add the Milk: Pour the hot milk into the kadhai with the gourd. Stir well and cook over medium-high flame until the milk reduces to a semi-thick mixture (approximately 45 minutes). Stir frequently.

Add Sugar and Cardamom: Once the milk has reduced, add 0.1 - 0.12 kg sugar and a pinch of cardamom powder. Stir continuously until the mixture thickens again.

Prepare the Garnish: Heat 1 tbsp ghee in a small pan. Add chironji, almonds, and cashews. Fry until light golden brown. Mix these into the halwa.
