2 pieces Green Chilies

1 inch Ginger

5 pieces Garlic Cloves

quarter cup Coriander leaves

1 tablespoon Lemon juice

half cup Dry coconut

2 tbsp Oil

2 pieces Onions , Chopped

2 pieces Bay leaves

1 teaspoon Coriander seeds

5 pieces Peppercorns

2 pieces Star anise

2 pieces Red chilies

1 inch Ginger

6 pieces Garlic cloves

1 cup Fresh coconut

Tips

Adjust the spice levels according to your preference.

For a richer flavor, use freshly grated coconut.

You can substitute chicken with vegetables or seafood for a vegetarian or pescatarian version.

Directions

In a bowl, combine 500g chicken, salt, turmeric, and a paste made from green chilies, ginger, garlic, and coriander. Add lemon juice, mix well, and marinate in the fridge for 40 minutes.

Heat a pan and dry roast 0.5 cup of dry coconut until golden. Grind it into a fine powder using a mixer.

In the same pan, heat 2 tbsp of oil. Add chopped onions, bay leaves, coriander seeds, peppercorns, star anise, red chilies, chopped ginger, garlic, and fresh coconut. Roast until aromatic, then transfer to a mixer and grind into a smooth paste with a little water. This is your Malvani bhajka vatan.

Heat a Kadhai and add 3 tbsp of oil. Sauté chopped onions until golden. Add Malvani masala or red chili powder, marinated chicken, and cook covered for 5 minutes.

Add the prepared Malvani bhajka vatan, mix well, and add salt and 2 cups of water. Cover and cook for 15 minutes until the chicken is tender.

Garnish with coriander and serve hot with rice, roti, or Malvani vade.
