50 grams Sankeshwari chilli
50 grams Pandi chilli
80 grams Coriander seeds
15 grams Cumin Seeds
10 grams Caraway seeds
20 grams Fennel seeds

20 grams Black Peppercorns
8 grams Cloves
8 grams Nagkesar
5 grams Kabab chini
5 grams Star anise
5 grams Teppal/tirphal / sichuan black peppercorns
3 pieces Black cardamom
15 pieces Green cardamom
8 grams Mace
5 grams Wild mace
3 grams Stone flower
5 grams Cinnamon Stick

10 grams Turmeric

Directions
Begin by drying the red chillies under direct sunlight for 2-3 days until they become completely dry and crisp. Alternatively, dry roast the chillies in a large kadhai or oven at 100°C for 25 minutes.
Once dried, remove the stalks from the chillies and grind them into a fine powder using a mixer grinder.
Toast the whole spices in a kadhai over low heat until fragrant. Transfer them to a bowl and let cool.
Grind all the toasted spices into a fine powder using a mixer grinder.
Mix the ground spices together, including the chilli powder, garam masala, turmeric, and asafoetida.
Strain the mixture through a sieve onto a large plate to ensure a smooth texture.
Transfer the Malvani Masala into an airtight glass jar for storage.
Serving Size: Approximately 600 grams of masala
