Masale Bhat, also known as Masala Rice or Pulao, is a fragrant and flavorful one-pot meal that is perfect for any occasion.

3 tbsp Oil

1 piece Bay leaf

1 piece Javetri (mace)

half inch Cinnamon stick

1 piece Badamful - stone flower

1 piece Black cardamom

2 pieces Black peppercorns

2 pieces Green cardamoms

2 pieces Cloves

1 teaspoon Cumin seeds

1 teaspoon Mustard seeds

8 pieces Curry leaves

1 tablespoon Ginger

2 pieces Green Chilies

1 piece Tomato

half cup Capsicum

half cup Ivy gourd - tindora

half cup Cauliflower florets

quarter cup Green peas

Salt as per taste

1 teaspoon Red chili powder

1 teaspoon Coriander powder

half teaspoon Turmeric powder

2 Teaspoons Teaspoons goda masala - garam masala

1 & half cups Water

Coriander as per taste

Coconut as per taste

Directions

Rinse 1 cup of rice and soak it in water for about 30 minutes.

Heat 3 tablespoons of oil in a pan and add bay leaf, javetri, cinnamon, badamful, masala cardamom, black peppercorns, green cardamoms, cloves, cumin seeds, and mustard seeds. Sauté until fragrant.

Add curry leaves, grated ginger, and chopped green chilies. Mix well.

Add chopped tomato, capsicum, ivy gourd, cauliflower florets, and green peas. Season with salt according to taste. Cover and steam for 2-3 minutes.

Sprinkle red chili powder, coriander powder, turmeric powder, and goda masala over the vegetables. Mix well.

Drain the soaked rice and add it to the pan. Pour in 1.5 cups of water.

Cover the pan and cook the masale bhat/pulao for about 15 minutes or until the rice is cooked and the water is absorbed.

Garnish with freshly grated coconut and chopped coriander before serving.

This recipe serves 4-5 people.
