half cup Fresh coconut

3 tbsp Dry coconut

1 piece Star anise

4 pieces Black Peppercorns

3 Serving Teppal/tirphal / sichuan black peppercorns

2 Cloves Cloves

5 pieces Red chilies

1 inch Cinnamon stick

1 Serving Black cardamom pod

2 tbsp Coriander seeds

half cup Coriander leaves

5 pieces Garlic Cloves

1 inch Ginger

3 pieces Kokam fruit

1 cup Water

1 teaspoon Cumin seeds

1 teaspoon Red chili powder

Salt as per taste

Directions

Wash and chop the mushrooms.Chop one onion.

Heat 2 tablespoons of oil in a pan.Add the chopped onion, fresh coconut, and dry coconut to the pan.

Sauté until the onion is golden brown.

Add star anise, black pepper, Sichuan black pepper (Teppal), cloves, red chilies, cinnamon stick, black cardamom, and coriander seeds.

Continue sautéing for a few minutes until fragrant.Once cool, blend the sautéed mixture with coriander leaves, garlic, ginger, kokum fruit, and a little water to create a smooth paste.

Heat the remaining 2 tablespoons of oil in a pan.

Add the cumin seeds and chopped onion; sauté until the onion is translucent.

Add the chopped mushrooms and sauté for 2 minutes.Add the red chili powder and the prepared spice paste.

Add 1 cup of water and salt to taste.Cover and cook for about 10 minutes on low heat until the mushrooms are tender and the flavors meld.

The curry is ready! Serve hot with rice, roti, or naan.
