Neer Dosa, also known as Ghavane in Marathi, is a traditional South Indian delicacy. Its name "Neer" translates to "water" in Kannada, signifying its thin and delicate texture. Made from rice batter, this crepe-like dish is light, crispy, and incredibly versatile.
Ingredients
4
1 cup Rice
450 ml Water
Salt as per taste
Tips
Use a well-seasoned cast-iron pan for best results.
The batter should be very thin, almost like buttermilk consistency, for the dosa to spread easily.
Adjust salt according to your taste preference.
For crispier dosas, cook them on a medium-high flame.
Experiment with toppings like grated coconut or finely chopped vegetables for added flavor.
Directions
Soak 1 cup of rice in water for about 4 hours.
After soaking, drain the water and transfer the rice to a blender.
Add 450 ml of water to the blender and blend until you get a smooth batter.
Add salt to taste and mix well.
Heat a cast iron pan on medium heat.
Once the pan is hot, pour a ladleful of the dosa batter onto the center of the pan.
Quickly spread the batter in a circular motion to form a thin layer.
Drizzle a few drops of oil around the edges of the dosa.
Cook until the edges start to crisp up and lift off the pan.
Flip the dosa and cook for another minute until it turns golden brown.
Remove from the pan and serve hot with chutney or sambar.
Makes approximately 10 dosas
