Ingredients

50 grams Coriander seeds
30 grams Cumin Seeds
20 grams Fennel seeds
3 pieces Bay leaves
10 pieces Cloves
3 pieces Star anise
3 pieces Black cardamom pods
50 grams Dry red chillies
10 grams Aamchur powder
5 grams Turmeric Powder
2 & half grams Dry ginger powder
5 grams Black Salt
Tips
Adjust the quantity of dry red chillies according to your spice preference.
Ensure the spices are completely cooled before grinding to avoid moisture retention.
Use fresh, whole spices for the best flavor and aroma.
Avoid overheating the spices while roasting to prevent burning and bitterness.
Directions
Dry roast coriander seeds, jeera seeds, fennel seeds, bay leaves, star anise, and black cardamom pods in a pan over low heat until fragrant. Remove and set aside.
In the same pan, dry roast the dry red chillies until they become crisp.
Allow the roasted ingredients to cool completely.
Grind all the roasted spices along with Aamchur, turmeric powder, dry ginger powder, and black salt to a fine powder using a spice grinder or mortar and pestle.
Store the Pav Bhaji Masala in an airtight container in a cool, dry place for up to 2 months.
Servings: Makes approximately 1 cup of Pav Bhaji Masala.
