4 tbsp Sesame seeds
4 tbsp Oil
quarter cup Chana dal
quarter cup Urad dal
12 pieces Red chillies
1 tablespoon Coriander seeds
1 tablespoon Cumin seeds
15 pieces Curry leaves
1 teaspoon Salt
half teaspoon Turmeric
Tips
Store Podi Masala in an airtight container in a cool, dry place for longer shelf life.
Adjust the quantity of red chillies according to your spice preference.
Use freshly roasted ingredients for the best flavor and aroma.
Directions
Heat a pan and add sesame seeds. Roast on medium flame until golden brown. Set aside.
In the same pan, add 1 tbsp oil followed by chana dal and urad dal. Roast until they turn golden brown. Set aside.
Now, add another tbsp of oil to the pan. Add red chillies, coriander seeds, cumin seeds, and curry leaves. Roast until fragrant. Set aside.
Allow all the roasted ingredients to cool down.
Once cooled, blend everything together along with salt and turmeric until you get a fine powder.
Your Podi Masala is ready to use!
