1 tablespoon Coriander powder

half teaspoon Garam masala

half teaspoon Cumin powder

half teaspoon Black salt

quarter teaspoon Black pepper powder

half teaspoon Dry mango powder

half teaspoon Chaat masala

1 pinch Asafoetida

1 teaspoon Lemon juice

1 tablespoon Oil

1 piece Egg White

3 tbsp Gram flour

4 tbsp Corn flour

Directions

First Marination:In a bowl, mix the prawns with salt, turmeric powder, and lemon juice.Let the prawns marinate for 15 minutes.

Prepare Vaatan:In a mixer grinder, add fresh coriander, garlic, ginger, green chillies, and water.Grind into a fine paste.

Second Marination:Add vaatan to the prawns along with powdered spices and lemon juice.Mix well, then add oil and continue to mix until prawns are well-coated.Add egg white, gram flour, and corn flour. Mix thoroughly.

Frying:Heat oil in a deep pan to 170°C.Fry prawns in small batches until slightly golden brown.Remove prawns and let them rest for 5 minutes.Increase the flame to high and heat the oil for a flash fry.Fry prawns again briefly until crisp and golden brown.

Serve:Drain excess oil from the prawns.Serve hot with green chutney.
