Ingredients
4
1 cup Ragi flour
half cup Wheat flour
half cup Ghee
half cup Jaggery powder
three quarters tablespoon Baking powder
half tablespoon Cardamom powder
2 tbsp Water
40 grams Cocoa Powder
10 pieces Cashews
Directions
Begin by whisking ghee until it turns creamy and smooth.
In a separate bowl, sieve ragi flour, wheat flour, and cocoa powder together.
To the sieved mixture, add jaggery powder, baking powder, cashews, cardamom powder, and a pinch of salt. Mix thoroughly to ensure even distribution of ingredients.
Gradually incorporate 2-4 tablespoons of water into the dry mixture until it forms a firm dough consistency.
Shape the dough into small, evenly sized cookies.
To bake, preheat your oven to 180°C (350°F) and place the cookies on a baking tray lined with parchment paper. Bake for approximately 18 minutes or until the cookies are firm and slightly golden brown.
Alternatively, you can also bake them on the stove. Simply cover the pan and bake for 15-18 minutes over medium heat until the cookies are cooked through.
This recipe makes around 12-15 cookies, depending on the size.
Notes
Ensure the ghee is at room temperature for easier whisking and incorporation into the dough.
Adjust the sweetness according to your preference by increasing or decreasing the amount of jaggery powder.
For a variation, you can add chopped nuts or seeds of your choice to enhance texture and flavor.
