Rava Ladoo, a beloved Indian sweet, is a perfect blend of roasted semolina (rava), ghee, and sugar. This melt-in-your-mouth delicacy is often prepared during festivals and special occasions. With its rich flavor and delightful texture, Rava Ladoo not only pleases the palate but also offers a comforting treat for the soul.

4 cups Rava semolina
1 cup Ghee clarified butter
2 cups Sugar
1 & quarter cups Water
1 tablespoon Cardamom powder
Tips
Ensure the rava is roasted evenly to avoid burning.
Checking the 1-string consistency is crucial for the right texture.
Cooling: Allow the mixture to cool enough to handle but not too cold, as it helps in shaping the ladoos easily.
Directions
Heat a pan and gradually add 1 cup of ghee.
Add 4 cups (600g) of rava to the pan.
Roast the rava on medium heat, adding ghee at intervals and mixing well.
Continue roasting until aromatic, approximately 15 minutes. Avoid burning the rava.
Once done, turn off the flame.
In another pan, add 2 cups (400g) of sugar and 1.25 cups of water.Mix well and cook until it forms a 1-string consistency syrup.Tip: To check the 1-string consistency, take a small amount of syrup between your fingers and pull apart; a single thread should form.
Turn off the flame and add 1 tbsp of cardamom powder to the syrup.Pour the hot syrup over the roasted rava and mix well.Cover and let it cool slightly.
Once the mixture is cool enough to handle but still warm, shape it into small ladoos (approximately 25g each).
You should get about 45 ladoos.
Notes
