Konkani Saat Kappayche Ghavane, also known as sweet neer dosa, is a cherished traditional recipe from the Konkan region of India. This delightful dish combines thin, crispy rice pancakes with a sweet filling made from coconut, jaggery, and cardamom. Not only is it a flavorful and satisfying breakfast option, but it's also rich in essential nutrients that contribute to overall health and well-being.

three quarters cup Jaggery
1 cup Grated Coconut
1 tablespoon Ghee
1 teaspoon Cardamom powder
450 ml Water

Directions
Prepare the Coconut Filling:Heat a pan and add 1 tablespoon of ghee.Add 1 cup of grated fresh coconut and 0.75 cup of jaggery (adjust to taste).Mix well and cook for about 5 minutes until the mixture thickens.Add 1 teaspoon of cardamom powder. Mix well and set aside.
Prepare the Dosa Batter:Soak 1 cup of rice in water for about 4 hours.After soaking, drain the water and transfer the rice to a blender.Add 450 ml of water to the blender and blend until you get a smooth batter.Add salt to taste and mix well.Alternatively, you can use a mixture of rice flour and water if you're short on time.
Cooking the Saat Kappayche Ghavane: Heat a cast iron pan and drizzle oil over it.Pour a thin layer of batter over the pan and cook for a minute.Cover and let the dosa cook.On one half of the dosa, spread the prepared coconut-jaggery mixture.Fold the dosa in half to cover the filling.Pour more batter on the empty half of the pan, let it cook, then add more filling and fold again.Repeat this process 7 times to achieve the traditional layers of the sweet neer dosa.Serve warm.
