Prepare the Dosa Batter:Soak 1 cup of rice in water for about 4 hours.After soaking, drain the water and transfer the rice to a blender.Add 450 ml of water to the blender and blend until you get a smooth batter.Add salt to taste and mix well.Alternatively, you can use a mixture of rice flour and water if you're short on time.

Cooking the Saat Kappayche Ghavane: Heat a cast iron pan and drizzle oil over it.Pour a thin layer of batter over the pan and cook for a minute.Cover and let the dosa cook.On one half of the dosa, spread the prepared coconut-jaggery mixture.Fold the dosa in half to cover the filling.Pour more batter on the empty half of the pan, let it cook, then add more filling and fold again.Repeat this process 7 times to achieve the traditional layers of the sweet neer dosa.Serve warm.
