1 cup Sprouted Moong Dal
quarter cup Rice Flour
1 tablespoon Ginger Paste
1 teaspoon Green chili paste
1 teaspoon Lemon Juice
1 teaspoon Eno fruit salt
1 teaspoon Salt
1 tablespoon Oil
half cup Coriander leaves
Water as per needed

Directions
Prepare the Steamer: Fill a pot with water and bring it to a boil. Grease a dhokla tray or a heatproof plate with oil.
Mix the Batter: In a mixing bowl, combine the sprouted moong dal, rice flour, ginger paste, green chili paste, lemon juice, and salt. Gradually add water to achieve a smooth batter.
Add Eno: Just before steaming, add Eno fruit salt to the batter and mix well. The batter should become frothy.
Pour and Steam: Pour the batter into the greased tray. Place it in the steamer and cover it with a lid. Steam for about 15-20 minutes or until a toothpick inserted in the center comes out clean.
Cool and Cut: Once cooked, remove the dhokla from the steamer and let it cool slightly. Cut into squares.
Garnish: Garnish with chopped coriander leaves. Serve warm with green chutney.
