Grind garlic cloves with water into a fine paste.

Boiling Vegetables

1 piece Medium - sized cauliflower

100 grams Green Peas

0 pinch Turmeric Powder

1 pinch Salt

Directions

Boil water in a stockpot. Add cauliflower, green peas, turmeric powder, and salt.

Cook until vegetables are soft. Strain and set aside.

Base Bhaji

Ingredients

50 grams Butter

2 tbsp Oil

2 tsp Cumin seeds

3 pieces Chopped Onions

2 pieces Capsicums

8 pieces Potatoes boiled & mashed

8 pieces Tomatoes, Chopped

1 piece Beetroot boiled & grated

20 grams Fresh coriander

Salt as per taste

2 tbsp Pav bhaji masala

1 teaspoon Kashmiri red chili powder

1 tablespoon Coriander powder

half teaspoon Turmeric powder

1 teaspoon Kasuri methi

2 pieces Green Chilies

8 tbsp Garlic paste

8 tbsp Red chili paste

Hot water as per needed

Directions

Heat butter and oil on a large tawa over medium-high heat. Add cumin seeds and let them crackle.

Add onions and cook until pink. Add capsicum and cook for 2-3 minutes on high flame.

Add boiled vegetables, salt, prepared pav bhaji masala, chili powder, coriander powder, turmeric powder, kasuri methi, and green chili paste. Mix well.

Add garlic paste and red chili paste. Mix and add 1-2 cups of hot water.

Mash the bhaji with a pav bhaji masher. Adjust consistency with more hot water as needed.

Let bhaji simmer on low flame.

Tadka

Ingredients

1 teaspoon Cumin Seeds

5 tbsp Prepared red chili paste

3 tbsp Garlic Paste

1 teaspoon Pav bhaji masala

1 pinch Garam Masala

Salt as per taste

Chopped coriander leaves as per needed

1 teaspoon Lemon juice

Directions

Heat butter in a pan. Add cumin seeds, red chili paste, garlic paste or water, pav bhaji masala, and garam masala. Cook for 1-2 minutes.

Add tadka to the bhaji. Mix well.

Adjust salt. Add fresh coriander, butter, and lemon juice. Cook for 2-3 minutes.

Red Chilli Garlic Chutney

Ingredients

4 tbsp Oil

1 teaspoon Cumin seeds

half cup Red chili paste

half cup Garlic paste

Salt as per taste

1 teaspoon Pav bhaji masala

1 teaspoon Garam masala

1 teaspoon Cumin powder

1 teaspoon Black salt

1 teaspoon Green chilies paste

1 tablespoon Fresh coriander

1 teaspoon Lemon juice

Directions

Heat oil in a pan. Add cumin seeds, chili paste, garlic paste, salt, pav bhaji masala, garam masala, cumin powder, kala namak, and green chili paste.

Cook until oil separates. Add fresh coriander and lemon juice. Mix well.
