Indulge in the vibrant flavors of summer with this traditional Indian delicacy, Sundried Raw Mango Pickles, also known as Kairi's Chhunda. Bursting with tangy, sweet, and spicy notes, this pickle is a perfect accompaniment to your meals.
Ingredients
4
half kg Raw mango
1 & half kgs Sugar
2 tsp Salt
2 tsp Chili powder
2 tsp Cumin
Tips
Choose a sunny, dry area for drying mango slices; avoid places with high humidity.
To extend shelf life, keep dried mango slices away from sunlight in a cool place.
Directions
Peel the raw mangoes and grate them finely using a steel grater.
Mix the grated mangoes with sugar and spread the mixture evenly on a steel plate.
Place the plate in direct sunlight for 4 days, allowing the summer heat to create a syrupy consistency.
Stir the mixture daily with a spoon to ensure even distribution of flavours.
After 4 days, add chili powder, salt, and cumin to the mango-sugar mixture.
Let it sit in the sun for another day to enhance the flavours.
Transfer the pickle into a clean, airtight jar and store it for up to a year.
Notes
Diabetics: Those with diabetes should consume sun-dried mango in moderation due to its high sugar content.
Individuals with Allergies: Avoid if allergic to mangoes or related fruits.
