Sweet potato fries are a delightful and healthier alternative to traditional fries, offering a crispy exterior and a tender, sweet interior. With a hint of spice and a touch of tang, these fries are perfect as a snack or a side dish. They are not only delicious but also packed with nutrients.

300 grams Sweet Potato
Salt as per taste
2 tbsp Vinegar
Black Pepper Powder as per choice
1 pinch Kashmiri red chilli powder
1 pinch Chaat masala
1 pinch Garam masala
1 teaspoon Lemon juice
Tips
For extra crispy fries, use the double frying method as outlined.
Ensure the oil is at the correct temperature for both frying stages to achieve optimal crispiness.
Feel free to experiment with different spices and herbs to match your taste preferences.
Directions
Wash and wipe the sweet potatoes. Peel them and cut into long, thick (1cm x 1cm) fries.
Wash the cut fries in cold water until the water runs clear. This helps remove excess starch.
Bring a stock pot of water to a rolling boil. Add salt and vinegar. Add the fries and blanch for 3 minutes. Strain and let cool to room temperature.
Heat oil to 185°-190°C. Fry the cooled fries for 1 minute. Strain and let them cool down to room temperature. At this stage, you can freeze the fries for later use.
Heat the oil to 180-185°C. Fry the cooled fries again over medium to low heat until golden brown and crisp. Remove from oil and drain excess oil.
Transfer the fries to a bowl. Sprinkle with salt, black pepper, and the additional spices. Toss well to coat evenly. Garnish with lemon juice and chopped fresh coriander.
Notes
People with certain digestive issues or those on a low-carb diet should be cautious with consuming sweet potato fries due to their carbohydrate content.
