1 & half cups Tender cashew nuts

2 tbsp Oil

1 piece Onion, Medium, Chopped

half inch Ginger, Chopped

4 pieces Garlic Cloves

1 pinch Tomato, Medium, Chopped

Salt as per taste

1 cup Fresh coconut

6 pieces Cashew nuts

2 tbsp Coriander, Chopped

2 Teaspoons Chili powder

half teaspoon Turmeric powder

1 cup Hot water

Tips

Adjust the amount of chili powder based on your spice preference.

For a richer taste, you can use coconut milk instead of water.

Directions

Soak Tender Cashew Nuts in hot water for about 30 minutes. Remove the peel and set aside.

Heat a Kadhai, add 2 tablespoons of oil. Sauté chopped onion, ginger, garlic, tomato, salt, fresh coconut, cashew nuts, and coriander powder until fragrant. Let it cool, then blend into a smooth paste.

Heat a pan with 2 tablespoons of oil, add the paste, and sauté.

Mix in red chili powder and turmeric powder. Cook until oil separates.

Add the soaked cashew nuts, mix well, and add 1 cup of hot water. Cover and cook until tender.

Adjust water for desired consistency. Garnish with coriander leaves and serve hot.

Avoid adding excess salt as cashew nuts naturally contain some sodium.
