150 grams Semolina - sooji / rava
75 grams Carrots
75 grams Bell Peppers
75 grams Spinach
quarter cup Onions
2 pieces Green chilies
half cup Curd
quarter teaspoon Baking soda
Salt as per taste
1 tablespoon Oil
Coriander as per taste
Tips
Ensure the batter is of thick consistency to get perfectly shaped appes.
You can customize the veggies according to your preference or based on what's available in your kitchen.
If you don't have an appe pan, you can also make these in a regular non-stick pan, shaping them into small round patties.
Directions
In a mixing bowl, combine semolina, chopped carrots, bell peppers, spinach, onions, green chilies, yogurt, baking soda, and salt. Mix well to form a thick batter. Add a little water if needed to achieve the desired consistency.
Heat the appe pan and grease each mold with a few drops of oil.
Pour a spoonful of the batter into each mold, filling them up to three-fourths full.
Cover the pan and cook on low heat for 3-4 minutes or until the bottom side turns golden brown.
Flip the appes using a spoon or fork and cook for another 2-3 minutes until they are cooked through and crispy on the outside.
Once done, transfer the Vegetable Appes to a serving plate, garnish with fresh coriander leaves, and serve hot with your favorite chutney or sauce.
